If you go warlock, you can probably drop dex down to 14 (assuming you go deep enough for pact of the blade at least which would be the main reason to go warlock) as you only need a +2 modifier to cap out medium armour AC. You can even go down to 10 if you want to wear heavy armour instead.

They usually go 2 ways: A Sorcerer that can wear heavy armor (Making Dex a dump stat because you no longer need it for AC). So you start paladin get heavy armor allowance, level 2 for smites, and you get a Sorc who is no longer a glass cannon. Once you're about level 5 or so, casters aren't really squishy at all. Casters in BG3 tend to be sturdier than martials are (in large part because of the Shield spell). Either run Human (you get a Shield + Light Armor + Shield spell for ~22-23 AC), or dip Cleric 1 for ~25-26 AC.
